Ingredients:
  • 1 cup almond meal
  • 1 cup pecans, coarsely ground
  • 1/4 cup honey
  • 1/3 tsp baking soda
  • 1/4 tsp salt
  • 4 dates, pitted
  • 1/3 cup mini chocolate chips
  • 2 tsp vanilla extract
  • 1/4 cup coconut oil melted
Instructions:
  1. Mix together ground pecans, baking soda, salt and almond meal. Toss in chopped dates.
  2. Mix together melted coconut oil, honey and vanilla extract.
  3. Add wet to dry and mix.
  4. Stir/fold in chocolate chips.
  5. Place mixture in fridge for 30 minutes *Important*
  6. Preheated over to 350°F.
  7. Divide mixture into 18-20 mounds, pressing down ever so slightly.
  8. Bake 10 minutes, roasting the pan after 5 minutes.
  9. Allow to cool on tray for 5 minutes before moving to wire rack.
