Ingredients:
  • 2 Tbsp olive oil
  • 1 large onion, chopped
  • 6 cloves of garlic, mined
  • 3 (14oz) cans Hunts Fire Roasted
  • 2 cups chicken broth
  • 1 cup heavy whipping cream
  • 20 fresh basil leaves, chopped
  • salt and pepper to taste
Instructions:
  1. In large pot, add olive oil and onions. Saute til translucent.
  2. Add chopped garlic and sauté for 2 more minutes.
  3. Add cans of tomatoes (juices included) to pan and cover for 15 minutes - stirring as needed.
  4. Add chicken broth and whipping cream.
  5. Bring to a boil. Cook uncovered 10 minutes
  6. Stir in basil, salt and pepper. Lower heat and cook another 5 minutes
  7. Carefully pour soup into blender (in sections).
  8. Puree soup until no large chunks.
  9. Serve warm and with grilled cheese
