Ingredients:
- 2 Tbsp olive oil
- 1 large onion, chopped
- 6 cloves of garlic, mined
- 3 (14oz) cans Hunts Fire Roasted
- 2 cups chicken broth
- 1 cup heavy whipping cream
- 20 fresh basil leaves, chopped
- salt and pepper to taste
Instructions:
- In large pot, add olive oil and onions. Saute til translucent.
- Add chopped garlic and sauté for 2 more minutes.
- Add cans of tomatoes (juices included) to pan and cover for 15 minutes - stirring as needed.
- Add chicken broth and whipping cream.
- Bring to a boil. Cook uncovered 10 minutes
- Stir in basil, salt and pepper. Lower heat and cook another 5 minutes
- Carefully pour soup into blender (in sections).
- Puree soup until no large chunks.
- Serve warm and with grilled cheese
