Ingredients:
  • 1 box pistachio pudding
  • 2 1/4 cup flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/2 cup dry roasted pistachios, coarsely chopped
  • 1 cup dried cranberries
Instructions:
  1. Preheat oven to 350.
  2. In a large bowl, stir flour, sugar, baking soda, tartar, salt, and pudding. Stir in melted butter and eggs.
  3. Add pistachios and cranberries, mix well.
  4. Drop tablespoons onto parchment lined cookie sheet.
  5. Bake 8-10 minutes. Cool on wire rack.
You can use a sugar cookie mix- just use 1/4 cup of flour, no sugar, baking soda, tartar, or salt.
