Ingredients:
- 1.5 cups white rice, uncooked
- 2 eggs
- 1 cups sugar
- 1 tsp vanilla
- Cream or half & half
- Raisins, optional
- Cinnamon
Instructions:
- Cook rice
- Mix eggs, sugar, & vanilla
- Add rice; mix well
- Pour enough cream (or half & half) to make it the consistency of soup
- Pour into greased 9x13 pan
- Add raisins on top; sprinkle cinnamon all over
- Cover it with tinfoil; bake at 350 for 40-45 mins. Check closer to end of time to make sure it doesn’t start to brown at the edges, you want a pudding consistency when you wiggle it (you may have to go a bit longer if needed)
