Ingredients:
  • 1.5 cups white rice, uncooked
  • 2 eggs
  • 1 cups sugar
  • 1 tsp vanilla
  • Cream or half & half
  • Raisins, optional
  • Cinnamon
Instructions:
  1. Cook rice
  2. Mix eggs, sugar, & vanilla
  3. Add rice; mix well
  4. Pour enough cream (or half & half) to make it the consistency of soup
  5. Pour into greased 9x13 pan
  6. Add raisins on top; sprinkle cinnamon all over
  7. Cover it with tinfoil; bake at 350 for 40-45 mins. Check closer to end of time to make sure it doesn’t start to brown at the edges, you want a pudding consistency when you wiggle it (you may have to go a bit longer if needed)
