Ingredients:
- 1 cup almond meal
- 1 cup pecans, coarsely ground
- 1/4 cup honey
- 1/3 tsp baking soda
- 1/4 tsp salt
- 4 dates, pitted
- 1/3 cup mini chocolate chips
- 2 tsp vanilla extract
- 1/4 cup coconut oil melted
Instructions:
- Mix together ground pecans, baking soda, salt and almond meal. Toss in chopped dates.
- Mix together melted coconut oil, honey and vanilla extract.
- Add wet to dry and mix.
- Stir/fold in chocolate chips.
- Place mixture in fridge for 30 minutes *Important*
- Preheated over to 350°F.
- Divide mixture into 18-20 mounds, pressing down ever so slightly.
- Bake 10 minutes, roasting the pan after 5 minutes.
- Allow to cool on tray for 5 minutes before moving to wire rack.
