Ingredients:
  • 2 Tbsp olive oil
  • 1 garlic clove, minced (or 1 tsp garlic powder)
  • 1 can (15 oz) black beans, with liquid (get a can with only black beans if you can)
  • 4 sprigs fresh cilantro, chopped (optional)
  • A pinch of kosher salt or sea salt
Instructions:
  1. In a medium pan, heat the olive oil over medium heat.
  2. Add black beans with their liquid, garlic and the cilantro sprigs.
  3. Simmer over the medium heat for about 15 minutes until the beans slightly thicken.
  4. Then make taco salad. Put beans over crushed chips and add toppings (lettuce, cheese, sour cream, avocado or guacamole, salsa…)
