Ingredients:
  • 1 lb ground deed
  • 1 cup salsa
  • 1 pkg taco seasoning
  • 6 flour tortillas (6 inch)
  • 1-2 cans pinto beans, rinsed
  • 1-2 cups shredded Mexican cheese
  • 4-5 scrambled eggs (optional)
  • toppings
Toppings of your choice: salsa, lettuce, olives, sour cream, avocado/guacamole, hot sauce. *Scrambled eggs are really good on it too- or go great with leftovers.
Instructions:
  1. Preheat oven to 400.
  2. Brown ground beef, drain. Stir in salsa and taco seasoning; simmer on low for 10 minutes.
  3. Spread about 1/2 of the ground beef on the sprayed bottom of a 9x13 pan. Cover with 2 tortillas.
  4. Add another layer of ground beef, half the beans, 1/2 of the cheese, 2 tortillas. Repeat layers and top with cheese.
  5. Cover with foil. Bake for 30 minutes. Remove foil and let stand in the oven for 5 minutes.
