Ingredients:
  • 2 1/2 lbs of Yukon Gold potatoes
  • 1/2 c Mayo
  • 1/3 c Zesty Italian Dressing
  • 2 tsp Mustard
  • 2 Hardboiled Eggs diced
  • 2 Tbsp sweet relish -substitute for onions or celery if you prefer
  • Salt & pepper to taste
Instructions:
  1. Wash & peel potatoes & cut into halves or thirds

  2. Place potatoes in a pot of salted water, bring to a boil, and cook for 12-15 minutes, or until fork tender, drain well

  3. Add all ingredients on top of warm potatoes and gently toss potatoes until evenly coated

  4. Refrigerate for at least 1 hour before serving
