Ingredients:
  • 2-3 cups of shredded chicken
  • 10 flour tortillas
  • 1 small onion, diced (optional)
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 can green chilies (optional)
  • 16 oz Monterey Jack cheese
Instructions:
  1. Melt butter in a sauce pan over medium heat. Stir in flour and cook for about a minute or until golden brown
  2. SLOWLY add chicken broth and whisk until completely smooth. Cook over medium heat until thick and bubbly. Turn heat to low. Stir in sour cream and green chilies
  3. In a large bowl, combine chicken, onion, and 1 cup cheese
  4. Pour 1 cup sauce in 9x13 pan
  5. Place 1/3 cup chicken mixture into each tortilla, place in dish
  6. Pour remaining sauce over the top and top with remaining cheese
  7. Bake at 350°F for 20-25 mins, or until browned and bubbly
