Ingredients:
- 1/2 cup corn meal
- 2/3 cup flour
- 3 Tbsp sugar
- 1 Tbsp baking powder
- 1/4 tsp salt
- 3 Tbsp olive oil
- 1/3 cup milk
- 1 egg
- 1 can creamed corn
- 1 (4.5 oz) can diced green chiles
- 1 lb ground beef
- 1 tsp cumin
- 1 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp pepper
- Enchilada sauce
- 2 cup shredded cheese
Instructions:
- For corn bread, mix corn meal, flour, sugar, baking powder, & salt
- Then add olive oil & mix until crumbly
- Add milk & egg; then carefully fold in creamed corn & chiles
- Bake in 9x13 pan or large cast iron frying pan at 400 for 20-25 mins
- While that bakes, brown hamburger seasoned with cumin, chili powder, salt, & pepper
- When corn bread is done, reduce temp to 350
- Poke holes in corn bread with fork & pour enchilada sauce over top (you can add some sauce to mix with meat)
- Top with meat & add cheese
- Cover with foil & bake for 20 mins
- Remove foil & bake longer til cheese starts to brown
- Let cool 10 mins before serving
