Ingredients:
- 3 Tbsp butter
- 2 Tbsp flour
- 1/2lb sliced mushrooms
- 1/4 cup chopped onions
- 2 cloves garlic, minced
- 1/2 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1 1/2 cup heavy cream
- 1/2 cup chicken stock
- 10 oz chopped broccoli (if using frozen broccoli, thaw and drain before adding to dish)
- 2 cup shredded Cheddar/Monterey cheese
- 3 cup cooked rice
Instructions:
- In large pot, melt the butter with the flour & cook over medium heat until golden in color, resembling the color of peanut butter
- Add mushrooms, onion, both garlics, cayenne, cream, & chicken stock
- Add broccoli, 1 cup of the cheese, & rice
- Mix & season with salt and pepper to taste
- Pour into buttered casserole dish, top with remaining cup of cheese & bake in preheated oven at 425°F until cheese is melted and golden (about 20 mins)
