Ingredients:
  • 1lb thin noodles
  • 1/4 cup butter
  • 2 tsp minced garlic
  • 3 large carrots (julienne carrots, zucchini, and red pepper)
  • 1 medium zucchini
  • 1 small red pepper
  • 1 cup whipping cream
  • 1/2 cup grated Parmesan
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Additional Parmesan
Instructions:
  1. Cook pasta according to package directions & drain
  2. Melt butter, add garlic and saute about ?
  3. Add vegetables & toss over high heat for 3 mins
  4. Remove from heat
  5. When burner is cooled, put veggies back on medium heat
  6. Stir in cream, Parmesan cheese, nutmeg, salt, and pepper (to taste).
  7. Add pasta to skillet and toss gently to blend well.
  8. Serve - garnish with additional Parmesan cheese.
*May add 2 cups cubed, cooked chicken to pasta for non-vegetarian

      Yes!! I forgot to put on the recipe that we usually put extra veggies- or just do less noodles. Although if you do extra veggies you might need more sauce ingredients. :)
