  • 1 cup diced onion
  • 1/4 cup flour
  • 1/8 tsp thyme

  • 1.5 lbs potatoes, peeled & cut into 1/2-inch pieces
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream

Instructions:
  1. Add bacon pieces to soup pot over medium-high heat & cook bacon until crispy & fat is rendered
  2. Remove bacon from pot & set aside

  4. Add onion & thyme & saute until onion is soft, about 7 mins.
  5. Sprinkle flour on top of onion & stir until combined
  6. Saute for an additional minute to cook the flour, stirring occasionally
  7. Stir in chicken broth until combined
  8. Add potatoes, milk, & cooked bacon bits & bring to a boil
  9. Reduce heat to low; simmer until potatoes are tender, about 12-15 mins
  10. Stirring occasionally every few minutes so that the bottom does not burn
  11. When potatoes are soft, stir in the cheddar cheese & sour cream. Season with salt & pepper to taste
  12. Serve warm, garnished with desired toppings (crispy bacon pieces, cheddar cheese, or green onions)
