Ingredients:
- 1lb thin noodles
- 1/4 cup butter
- 2 tsp minced garlic
- 3 large carrots (julienne carrots, zucchini, and red pepper)
- 1 medium zucchini
- 1 small red pepper
- 1 cup whipping cream
- 1/2 cup grated Parmesan
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1/2 tsp pepper
- Additional Parmesan
Instructions:
- Cook pasta according to package directions & drain
- Melt butter, add garlic and saute about ?
- Add vegetables & toss over high heat for 3 mins
- Remove from heat
- When burner is cooled, put veggies back on medium heat
- Stir in cream, Parmesan cheese, nutmeg, salt, and pepper (to taste).
- Add pasta to skillet and toss gently to blend well.
- Serve - garnish with additional Parmesan cheese.
I very much enjoyed this!! Next time, I would cut back on the noodles and add more veggies! Delicious!!
Yes!! I forgot to put on the recipe that we usually put extra veggies- or just do less noodles. Although if you do extra veggies you might need more sauce ingredients. :)
