Ingredients:
  • 1 lb ground beef
  • 1/2 onion, chopped
  • 1 Tbsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 (15 oz) can of diced tomatoes, undrained
  • 1 (15 oz) can kidney beans, drained
  • 1 cup minute rice
  • 1 cup water
  • 1/2 green pepper, chopped
  • 3/4 cup shredded cheese
  • Bag of Frito corn chips
Instructions:
  1. Brown ground beef and onions in skillet. Drain off fat.
  2. Sprinkle chili powder, salt, garlic over the meat.
  3. Add the tomatoes, beans, uncooked rice, water and green peppers.
  4. Cover and simmer, stirring occasionally for 20 minutes. Once liquid is mostly gone, add shredded cheese.
  5. Serve over crushed Frito corn chips.
