Ingredients:
  • 1lb beef chuck (beef for stir fry)
  • 1/4 cup soy sauce
  • 1 clove garlic, minced OR 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1 Tbsp olive oil
  • 1 cup green onions, thinly sliced
  • 1 cup red or green peppers, diced
  • 2 stalks of celery, chopped
  • 1 Tbsp cornstarch
  • 1 cup water
  • 2 Roma tomatoes, diced
Instructions:
  1. Cut meat across grain into thin strips (if meat is not pre-cut).
  2. Combine soy sauce, garlic and ginger. Add beef. Toss and set aside.
  3. Heat oil in large skillet. Add beef and toss over high until browned and then simmer 20 minutes.
  4. Turn heat up and add vegetables. Toss until vegetates are tender, about 10 minutes.
  5. Mix cornstarch and water. Add to pan: stir, cook until thickened.
  6. Add tomatoes until heated through.
  7. Serve over rice.
