Ingredients:
- 6 slices of bacon (about 6 oz) cut into 1-inch pieces
- 3 Tbsp bacon grease or butter
- 1 cup diced onion
- 1/4 cup flour
- 1/8 tsp thyme
- 2 cups chicken broth
- 2 cups milk, warmed
- 1.5 lbs potatoes, peeled & cut into 1/2-inch pieces
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- Salt & pepper to taste
Instructions:
- Add bacon pieces to soup pot over medium-high heat & cook bacon until crispy & fat is rendered
- Remove bacon from pot & set aside
- Pour off most of grease but don't clean the pot (3 Tbsp of bacon grease should remain, otherwise add 3 Tbsp of butter)
- Add onion & thyme & saute until onion is soft, about 7 mins.
- Sprinkle flour on top of onion & stir until combined
- Saute for an additional minute to cook the flour, stirring occasionally
- Stir in chicken broth until combined
- Add potatoes, milk, & cooked bacon bits & bring to a boil
- Reduce heat to low; simmer until potatoes are tender, about 12-15 mins
- Stirring occasionally every few minutes so that the bottom does not burn
- When potatoes are soft, stir in the cheddar cheese & sour cream. Season with salt & pepper to taste
- Serve warm, garnished with desired toppings (crispy bacon pieces, cheddar cheese, or green onions)
