Ingredients:
  • 4 large boneless skinless chicken breasts
  • 3 Tbsp butter
  • 6 cloves minced garlic
  • Pinch of salt & pepper
  • 1/3 cup honey
  • 2 Tbsp Dijon mustard
Instructions:
  1. Place greased 8x8 inch baking dish in 425 degrees F oven to heat up while you prepare the glaze
  2. Melt the butter in a small saute pan. Add garlic & cook for 30-60 seconds to soften it. Don't brown the garlic
  3. Add the honey, Dijon mustard & pinch of salt/pepper. Stir well to blend & simmer over medium heat for 1-2 mins to reduce the glaze
  4. Lightly season the chicken breasts with salt/pepper. Remove the hot pan from the oven & place the chicken breasts an equal distance apart in the pan. Pour the hot glaze evenly over the chicken
  5. Return the pan to oven & bake for 15 mins. Remove from oven & baste the breasts with the glaze in the bottom of the pan; return to oven for an additional 15-20 mins or until a meat thermometer reads 170 degrees F inserted in the thickest part of the breast
  6. Allow the chicken to rest for 5 mins before serving
