Ingredients:
- 1 1/4 cup flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup sugar
- 4 oz cream cheese, cut into 1/2" squares
- 1 egg
- 1/3 cup vegetable oil
- 1 1/2 tsp vanilla
- 1/2 cup milk
- 1 cup raspberries (if frozen, do not thaw)
Instructions:
- Sift flour, powder, & salt together in medium bowl
- Add sugar & mix well
- Add cream cheese squares, coat well in flour mixture
- In separate bow, combine egg, oil, vanilla, and milk
- Add dry ingredients & stir until just combined - Don't over mix!
- Add raspberries & fold in gently
- Fill greased muffin cups 1/2 full
- Bake in preheated oven at 350°F for 20-25 mins or until muffins test done
