Ingredients:
- 1 lb ground beef
- 1/2 onion, chopped
- 1 Tbsp chili powder
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 (15 oz) can of diced tomatoes, undrained
- 1 (15 oz) can kidney beans, drained
- 1 cup minute rice
- 1 cup water
- 1/2 green pepper, chopped
- 3/4 cup shredded cheese
- Bag of Frito corn chips
Instructions:
- Brown ground beef and onions in skillet. Drain off fat.
- Sprinkle chili powder, salt, garlic over the meat.
- Add the tomatoes, beans, uncooked rice, water and green peppers.
- Cover and simmer, stirring occasionally for 20 minutes. Once liquid is mostly gone, add shredded cheese.
- Serve over crushed Frito corn chips.
