Ingredients:
  • 1 lb cheese tortellini
  • 1 lb jumbo shrimp, cleaned & devined
  • 2 Tbsp butter
  • 1 plum tomato, diced
  • 1 Tbsp fresh basil, chopped
  • 2 cloves garlic, minced
  •  2 tsp prepared horseradish (optional)
  • 1 Tbsp flour
  • 1/2 cup heavy cream
  • 1/4 cup grated Pecorino Romano cheese
  • Salt & pepper to taste
Instructions:
  1. Cook tortellini to package directions; drain
  2. Add butter to large skilled & cook shrimp until almost cooked through; approximately 2-3 mins
  3. Add the tomato, basil, garlic, & horseradish & cook for another 1-2 mins until the shrimp is cooked through & is white/pink (not clear)
  4. Stir in flour; then add heavy cream & cheese. Mix well; then add the cooked tortellini & stir until all coated. Sprinkle with extra cheese & chopped basil for garnish
*I don't add horseradish but the original recipe called for it. I also add peas for extra veggies
