Ingredients:
- 1lb beef chuck (beef for stir fry)
- 1/4 cup soy sauce
- 1 clove garlic, minced OR 1 tsp garlic powder
- 1/2 tsp ground ginger
- 1 Tbsp olive oil
- 1 cup green onions, thinly sliced
- 1 cup red or green peppers, diced
- 2 stalks of celery, chopped
- 1 Tbsp cornstarch
- 1 cup water
- 2 Roma tomatoes, diced
Instructions:
- Cut meat across grain into thin strips (if meat is not pre-cut).
- Combine soy sauce, garlic and ginger. Add beef. Toss and set aside.
- Heat oil in large skillet. Add beef and toss over high until browned and then simmer 20 minutes.
- Turn heat up and add vegetables. Toss until vegetates are tender, about 10 minutes.
- Mix cornstarch and water. Add to pan: stir, cook until thickened.
- Add tomatoes until heated through.
- Serve over rice.
