Ingredients:
- 1 lb cheese tortellini
- 1 lb jumbo shrimp, cleaned & devined
- 2 Tbsp butter
- 1 plum tomato, diced
- 1 Tbsp fresh basil, chopped
- 2 cloves garlic, minced
- 2 tsp prepared horseradish (optional)
- 1 Tbsp flour
- 1/2 cup heavy cream
- 1/4 cup grated Pecorino Romano cheese
- Salt & pepper to taste
Instructions:
- Cook tortellini to package directions; drain
- Add butter to large skilled & cook shrimp until almost cooked through; approximately 2-3 mins
- Add the tomato, basil, garlic, & horseradish & cook for another 1-2 mins until the shrimp is cooked through & is white/pink (not clear)
- Stir in flour; then add heavy cream & cheese. Mix well; then add the cooked tortellini & stir until all coated. Sprinkle with extra cheese & chopped basil for garnish
